An Oyster, by Any Other Name
Look over the menu at any local raw bar, and it may seem as if there are dozens of species of oysters. Blue Points, Apalachicolas, Malpeques, Chesapeake, Wellfleets, Fanny Bays, Quilcenes, Kumamotos, Belons. The list seems endless.
